Those are great ideas, Susan!
It's also a great opportunity for mud and/or water play. You could also have a variety of sensory bins with various natural materials: river rocks, dirt, sand, water, leaves, etc. These materials can also serve as open-ended art materials. Have the children collect items to add to the bins.
Have an outdoor picnic (real or pretend) and then lay on your backs and do some cloud watching.
