I do not know of any specific songs or poems on how to write letters, however there is a great program called Learning Without Tears (formally Writing Without Tears). This program introduced to my classroom by our OT. The program has a CD that has a lot of different songs the kids love. The focus is on the proper way to make uppercase letters (for PreK) and spacial awareness. The program introduces letters in a developmental fashion-for example starting with letters that are straight, then builds to teaching children how to cross mid-line. You can purchase part of the program materials or all (it is pricey). My kids love this program and the songs that accompany it. I suggest you look into the program for ideas. I use one work book (I did not buy a class set) and make copies for what I want the children to work on. I also use the sticks and play-doh boards for children to build letters and the CD. You can buy the teachers manual separately, and use that in you plans with materials you may already have available. I hope this helps
